Course Description

The thought of making your own kimchi or chutney might seem a bit scary, but preserving is great fun and ticks all the boxes for seasonality and zero waste without requiring specialist equipment - all you need is a few key ingredients and some patience. Our chef will guide you through a variety of methods and recipes which will change with the seasons. He will explain the reasons behind the methods used and assist you in getting hands-on with practical preserving techniques so you'll pick up plenty of tips on how to get the best out of seasonal produce. During this class you will learn how to pickle, preserve and ferment like a pro to create delicious and nutritious staples to be enjoyed all year round. You’ll learn to create a selection of pickles, preserves and ferments such as: • Sauerkraut • Korean kimchi • Pickled cucumbers We will provide all the ingredients you need to create a selection of preserved food to take home but you will need to bring an apron and some clean, empty jars to put your preserves in. Due to large numbers of people booking onto our courses and not turning up, we are now taking a £10 deposit for each course to help ensure attendance. You will be eligible to get the deposit back if you attend every session. Or, if you can’t attend, you must: · Email or contact the tutor or admin team on Training@gcda.org.uk to let them know you can’t make it. · Still attend at least 70% of the course. Do not book on if you think you cannot attend 70% of the course. · You must give 24 hours notice to be eligible for the refund · If you don’t show up and don’t get in touch, you will lose your deposit. If leaving a £10 deposit is a barrier because of financial difficulties, please contact training@gcda.org.uk to talk to us about this. You must request the return of the deposit within 7 days of the end of the course.
